Lemon myrtle is a beautiful Australian shrub that grows up to three metres in height. It has long hanging branches of soft green leaves and clusters of cream flowers in autumn. It naturally occurs in the wetter coastal areas of northern New South Wales and southern Queensland. It is a member of the Myrtaceae family.

Lemon Myrtle has long been used in Aboriginal cuisine and medicine. It is high in antioxidants, vitamin E, calcium, zinc, magnesium and lutein. It also has anti-microbial and anti-fungal properties.

Lemon myrtle is one of the most cultivated and commercially mature species in the native food industry. It has an aroma of creamy lemon and lime with notes of menthol. The leaves are generally dried and milled to be used as tea or a flavour ingredient and complements fish and chicken. They are also used to flavour ice cream or sorbet. Essential oil is also extracted from the leaf through steam distilling.
